Neeta Mittal to host Indian cooking classes at Refugio Kitchen
Classes will explore spices, vegetarian and classic dishes
– Neeta Mittal, owner of LXV Wine, in hosting a three- part cooking series to explore the flavors of Indian cooking. Mittal will begin by imparting an in-depth understanding of spices; explore the principles of Ayurveda, vegetarianism, veganism and food; and then finish with the most elusive subject of all: Indian food and wine pairing. You can take one, two or all three classes.
“As we become more demanding of flavors and more intuitive about our health, spices once thought to be exotic are making an exciting splash in the culinary world,” explains Mittal who pioneered “wine and spice,” pairings in Paso Robles.
The first class will be a hands-on class, as guests touch, smell, roast, crush, fry, and ”temper” spices to reveal the various layers of complexity. The cost is $75.
The second class will focus on easy vegetarian dishes such as saag paneer, chana masala, aloo gobi, daal, baigan and the quintessential Naan bread. The cost for this class is $85.
In the third class, guests will learn to make four Indian classics: Tandoori Chicken, Chicken Tikka Masala, Lamb Korma, and Biryani, then pair each dish with wine. The cost is $95 for this class.
All classes will be held on Wednesdays, May 4, 11 and 18, around 5 p.m., and are demonstration format. Classes may be purchased individually, or you can register for all three for the discounted price of $230. Classes will be strictly limited to 14 students.
