Family-owned restaurant from Chef Rachel Ponce and brewmaster Eric Ponce serves lunch and dinner Wednesday through Saturday

– Staviary, a family-owned restaurant created by Chef Rachel Ponce and brewmaster Eric Ponce, opened Wednesday, Nov. 4, at 1102 Railroad St. in downtown Paso Robles.

The restaurant is open Wednesday through Saturday, with lunch from 11 a.m. to 3 p.m. and dinner from 5 to 9 p.m., according to its website. Reservations can be made through the restaurant’s website, and the phone number is (805) 439-8200.

Staviary is built around pairing food, beer and wine, the restaurant says on its website. Rachel Ponce’s culinary career began in Paso Robles. She founded the catering company Pair With in 2020, through which she has worked with local wineries, winemakers and breweries. Paso Robles Daily News previously reported on a four-course dinner she prepared for the El Camino Homeless Organization’s Vines that ECHO fundraiser.

Eric Ponce earned a master’s degree in fermentation science in Berlin in 2011 and went on to direct the barrel-aging program at Goose Island Beer Company in Chicago, where he and Rachel met. He named the brewery’s barrel warehouse Staviary, and the couple married in that space in 2015. Eric later led the barrel program at Firestone Walker, while Rachel built Pair With.

The restaurant’s midday menu includes fried olives, chicharron, an oyster mushroom parfait, pate with purple potato crostini, a tuna nicoise sandwich, chicken schnitzel, mussels and frites, and a miso cookie. The website also lists a wine and beer list.

The opening follows a project the couple has worked toward for more than ten years, according to a representative for Pair With, the couple’s catering company.
