New bar opens at Paso Robles Inn

Two additional dining concepts are planned at the hotel
– Cattlemen’s Bar at Paso Robles Inn opened last week as the first of three dining concepts from chef Charlie Palmer planned for the downtown hotel.
The bar and lounge marks the Michelin-starred chef’s expansion into California’s Central Coast. The 83-seat space draws on the property’s history, which dates to 1942, when the venue served as a gathering place for local ranchers.
The menu includes shareable bar items, salads, handheld dishes, and steaks. Featured items include La Panza Pie filled with slow-braised beef cheek, Cattlemen’s Chili prepared with ancho chile, cornflake-crusted Handle Bar drumsticks, a Hot Honey Chicken Biscuit made with Sierra Farms honey, and a French Onion Filet Mignon topped with a French onion demi and fontina crisp. Signature cocktails include the Plainside Spritz, Wildflower Wrangler, and Pear of Spades.
Programming at the bar will include recurring events focused on local agriculture and community participation.
A monthly series titled Women of the West is scheduled to begin March 12 and will feature women working in agriculture, ranching, and winemaking on the Central Coast. Each featured host will have a dish and drink pairing created in her honor, with a portion of proceeds donated to a charity of her choice.
Paso Night will take place on the second Tuesday of each month and will feature live music and a $29 prime rib special.
Burger Night will be held weekly on Monday evenings and will include a $24 special featuring The Stockman Burger made with house-ground dry-aged beef and a beer.
Two additional dining concepts are planned at the hotel. Salina Rooftop is scheduled to open in May at The Piccolo at Paso Robles Inn, followed by The Pass by Charlie Palmer in the summer, described as a modern tavern concept.
The projects are part of a $13 million investment in Paso Robles Inn by Peregrine Hospitality, a boutique hotel management company.
