New Chipotle Mexican Grill opens this week
A new Chipotle Mexican Grill is set to open Thursday, June 26 in Paso Robles. The location at 98 Niblick Road, near Walmart in the Woodland Shopping Center, is currently being completed. The company recently held job interviews to fill positions at the restaurant. The location was previously home to Chinos Rock and Tacos, which closed last year.
It will be the third Chipotle in San Luis Obispo County. Chipotle serves what it calls “food with integrity,” which highlights its efforts to use organic ingredients and naturally raised meats. “Our menu will feature all the same menu items found in our other restaurants including burritos, bowls, tacos and salads made with responsibly raised meats, fresh house-made salsas, rBGH-free dairy and made-from-scratch guacamole,” says Danielle Winslow with Chipotle’s public relations and marketing department.
Why Paso Robles? “We look to put restaurants in locations where high volumes of our customers are, specifically in urban and suburban areas with strong residential and daytime populations,” says Winslow. “Preferred generators include residential, office, retail, university, recreation and hospitals.” Chipotle’s restaurants are typically 2,500 square feet with a seating capacity of about 50 people. None of its restaurants have a drive through.

Chipotle is an international Mexican fast food chain started in Colorado in 1993 by Steve Ells. McDonald’s Corp. was an early investor from 1998 to 2006, when it sold its interest in Chipotle. The chain now has 1,500 Chipotle Mexican Grills in North America and Europe.
