    Winemaker dinner celebrates Paso Robles wines & Spanish heritage

    A Collaboration with Bodega de Edgar and Diablo Paso to Kick Off Paso Robles Wine Festival Weekend

    Sabor & Sazόn invites guests to experience “Noche de Sabor” (Night of Flavor), its first-ever winemaker dinner—an evening dedicated to celebrating the rich Spanish heritage and winemaking excellence of Paso Robles. This special collaboration with Bodega de Edgar and Diablo Paso will take place on Thursday, May 14th at 5:30 PM, kicking off Paso Robles Wine Festival Weekend in unforgettable style.

    At the heart of Noche de Sabor is a shared story—where Spanish roots, family tradition, and Paso Robles terroir come together. Winemakers Edgar Torres and Enrique Torres bring generations of heritage and passion to their craft, producing wines that reflect both their cultural lineage and the distinctive character of the Central Coast. This dinner is designed to showcase those wines in their purest expression—thoughtfully paired with a menu that honors the flavors of Spain.

    Leading the culinary experience is Chef Jorge, whose menu draws inspiration from classic Spanish cuisine while highlighting seasonal ingredients and bold, authentic flavors. Each course has been carefully created to complement and elevate the wines, offering guests a true taste of Spain—right in Paso Robles.

    The evening begins with a reception featuring tray-passed Shrimp and Lobster Ceviche, paired with vibrant sparkling albariño from Bodega de Edgar and rosé from Diablo Paso, setting the tone for a night rooted in celebration and connection.

    Evening Menu & Wine Pairings Include:

      • First Course: Pulpo a la Gallega with potatoes, smoked paprika, and extra virgin olive oil
        Paired with 2022 E-Squared Grenache/Syrah blend from Bodega de Edgar 
      • Second Course: Roasted Rabbit with patatas and roasted garlic paprika sauce
        Paired with 2021 Garnacha “La Malinche” from Diablo Paso 
      • Third Course: Paella Valenciana with rabbit, pork, and chorizo ibérico
        Paired with 2017 Gran Reserva Tempranillo/Graciano (Bodega de Edgar) & 2021 Colección Privada Tempranillo (Diablo Paso)
      • Fourth Course: Lemon Tart
        Paired with 2025 ‘La Glora Dulce’ Albariño dessert wine from Diablo Paso

    Priced at $185 per person, this intimate dinner offers guests the rare opportunity to engage directly with the winemakers, explore the stories behind each bottle, and experience how Spanish tradition continues to shape the evolving identity of Paso Robles wine country.
