Woodstocks Pizza in San Luis Obispo hosts grand re-opening 

Grand reopening showcased $1.5 million restaurant renovation

–Woodstock’s Pizza in San Luis Obispo hosted a Grand Reopening of its newly renovated San Luis Obispo restaurant, which consisted of a Ribbon Cutting with the Chamber of Commerce and a launch party in the evening to celebrate its $1.5 million renovation. Those in attendance included its owners Jeff and Laura Ambrose, Restaurant Manager Mike Swift and other attendees from the community including SLO Mayor, Heidi Harmon.

The renovation, which required 17 days of complete closure to complete, involved a top to bottom overhaul of the space including a new ceiling and floors, a large central bar, 28 televisions and a state of the art energy efficient kitchen with a triple deck oven. The eatery can now produce 180 pizzas an hour, increasing its production by a third. There is an all-new Gelato offering, with six all natural gluten free flavors available to eat in or to go. Capacity has doubled, with the space now able to host 369 standing and 260 seated, enabling it to better accommodate groups including wedding parties, corporate parties or student clubs. Additionally, the restaurant has doubled its staff, creating new job openings which they’re currently hiring for.

The Grand Reopening follows the launch of the new ‘Backyard Space’ in August, which features a full indoor deck with a fireplace and picnic tables, and an expanded beverage offering, which now includes 24 taps, kombucha, cold brew coffee, and wine. The “Backyard” features astroturf-like carpeting, reclaimed wood barn doors and other recycled elements, murals or surrounding mountains and perfectly captures the local “backyard” feel.

The decision to carry out such an extensive renovation was ultimately made to improve the customer experience for the community. “In 2020, Woodstock’s Pizza will have been in San Luis Obispo for 40 years” says Jeff Ambrose, Owner and President of Woodstock’s Pizza. “During that time, we’ve grown with the community – it’s invested in us and we want to ensure we’re investing in the restaurant. The improvements will not only maintain, but enhance the great experience and fun environment our customers enjoy when dining with us. We’re hoping the new space will deliver on that.”

“San Luis Obispo is a wonderful community which we’re proud to be part of and support,” said owner Laura Ambrose. “Last year we donated around $200,000 to local charities including United Blood Service and The United Way in SLO along with countless pizzas for local fundraisers and events. The SLO restaurant is our first location in California so it’s always been special to us. We’re excited to see it go from being our oldest to our newest venue following the renovations.”

Woodstock’s Pizza was also recently certified as an Ocean Friendly restaurant by the Surfrider Foundation. Supporting its mission to protect the world’s ocean, waves and beaches compliments Woodstock’s efforts to strengthen the San Luis Obispo community and the many miles of coastline residents enjoy here on the Central Coast.
